Jon’s winemaking takes a minimalist approach, based on traditional winemaking practices: allow Mother Nature to yield the fruit manifested in the wine naturally with the least human intervention.

In general the wines are unfiltered and un-fined. Even the oak program is careful not to overpower the fruit. Oak typically gives the fruit more structure and to round out the tannin for better ageing. Most reds use 20-40% new American and French oak, while the whites usually use no new oak.

Of course, different years produce different results. At Madison Cellars we want nature to express herself; therefore the wines are different from year to year. Our goal is not to mold nature into a consistent monotony of singular flavor, but rather to express the season as manifested in the grape and later crushed into the wine. We bend to the needs of the grapes and develop our winemaking program accordingly.
