Tasting Notes: This wine demonstrates a finesse rarely found in wines from the Paso Robles area. It exhibits the strong fruit forward style common today, but with well integrated tannins that do not overpower, the wine delivers in a complex and unabashed manor all the bold flavors and body one would expect in a high end Cabernet. The black cherry flavor starts on the front and carries to the midpalate. The finish is chewy and lingering with the tastes of white pepper.
Accolades and Awards: tbd - recently released!
Aging Properties: This wine is improving each month as it opens up and debuts its rose and cherry blossom bouquet. Ready to drink now but will continue to improve in the bottle for 5-8 years.
Food Pairing: Your best steak? Personally, a rare grilled ribeye steak rubbed with garlic butter and some onions and mushrooms sautéed in olive oil and the same wine, works best for me! In general, medium/heavy bold flavored meats.
