General Statement: Made from 100% estate grown Cabernet Sauvignon grapes, this wine is a nice balance of robust tannin and depth with plenty of fruit to remain approachable today.
The nose has plenty of cherry blossom and vanilla for a 100% Cabernet. Layers of cherry, blackberry, and black currant are interspersed with fig, cola, and white pepper. The mid palate lingers with strawberry jam.
Aged 22 months in French and American oak, with 40% new, this wine is balanced and ready for drinking now.

Vineyard Notes:
- Rootstock: own-rooted – affording maximum terrior transference
- Location/Soil: Clay loam and loam soils, on the west and southeast facing sides of the vineyard
- Harvest Dates: October 1st through 15th, 2003
Winemaking Notes:
- Fermentation: Primary fermentation in open top fermenters with three daily punchdowns. Secondary fermentation in barrels. Unfined and unfiltered.

Barrel Aging: Barrel aged for 22 months in French and American oak of which 40% was new (2/3 American and 1/3 French).

Tasting Notes: This wine demonstrates a finesse rarely found in wines from the Paso Robles area. Exhibiting the strong fruit forward style common today but with well integrated tannins that do not overpower, the wine delivers in a complex and unabashed manor all the bold flavors and body one would expect in a high end Cabernet.
The nose has plenty of cherry blossom and vanilla for a 100% Cabernet. Layers of cherry, blackberry, and black currant are interspersed with fig, cola, and white pepper. The mid palate lingers with strawberry jam. The finish is chewy and lingering with the tastes of white pepper.
Accolades and Awards: not submitted due to limited production.
Aging Properties: This wine continues to improve with age. Ready to drink now but will continue to improve in the bottle for 5-7 years.
Food Pairing: Beef and more beef. Personally, I enjoy it with almost any grilled meat. Tri tip slow roasted on the grill seems to beg for this companion.
