- Fermentation: Primary fermentation in open top fermenters with punch downs 3-4 times daily. Secondary fermentation in barrel.

Barrel Aging: 21 months in Hungarian and American oak of which 32% were new.

Tasting Notes The nose exudes a subtle butterscotch and strong cardamom spice scents. The pallet begins with cherry and plum, with integrated new saddle leather in the background. Interestingly enough, the wine continues with nutmeg and fig and finishes with toffee and lingering fig and white pepper.
Aging Properties: This balanced Syrah is rich and deep and will only get better over the years aging at least 5-7 years.
Food Pairing: A well balanced wine; it will go well with roast pork or even spicier sausage and peppers.
